Original Gravity: 1.065         Final Gravity: ~1.012

Color: Mahogany Brown
Batch Size : 5.5 gallons
 
Fermentables
13 lbs Golden Promise
1lb UK Crystal 75L
4oz Chocolate Malt
4oz Peat Smoke
Total 14 lbs 8oz
 
Hops and Kettle Additions
60 min 8 AAU UK Bittering (Northdown, Challenger, etc.)
15 min Kettle Fining
 
 
Procedure:
Mash in with 4.5 gallons of water (1.25qts/lb)
Target Rest: 153'F for 60 minutes
Vorlaugh until runnings appear mostly clear and free of debris
Sparge with apx. 4.5 gallons of water at 167'F
Resume the sparge and collect 7.0 gallons of wort in the kettle and bring to a boil.
Total boil length is 90 minutes. Follow schedule of kettle additions above
Chill to 60'F – 68'F & pitch yeast
Ferment with Wyeast Scottish Ale between 62'F-68'F.
