Fermentables
6 lbs Light DME
2 lbs Golden Promise
1.25 lbs Flaked Wheat
.75 lbs Flaked Oats
½ lb UnMalted White Wheat
 
 
Hops & Kettle Additions
20 min 1 oz Amarillo
1 min 1 oz Amarillo
Whirlpool 1 oz Citra (Whirlpool addition added once wort reaches around 170'F)
Whirlpool 1 oz Mosaic (Whirlpool addition added once wort reaches around 170'F)
Whirlpool 1 oz Simcoe (Whirlpool addition added once wort reaches around 170'F)
Dry Hop 2 oz Citra
Dry Hop 1 oz Simcoe
 
 
 
 
Procedure
- Bring 2.5 gallons of water up to 160'F and turn off heat source.
- Place crushed grains in a muslin bag/mash tun and steep/mash for 35 minutes at ~150'F
- Remove grains letting the liquid drain back into the pot for a moment (do not squeeze!).
- Rinse grains with an additional ½ gallons of water at 170'F.
- Add additional water to bring volume to 6.5 gallons and bring to boil.
- Dissolve the DME as the water approaches a boil.
- Once the DME is thoroughly dissolved and the kettle is up to a boil,
  make the first hop addition and follow the schedule.
- Once boil is complete, Chill wort to between 180'F-160'F and add whirlpool hop additions
- Stir whirlpool additions for 20 minutes for maximum hop extraction.
- Chill wort to 60'F – 70'F and transfer to fermenter.
- Ferment with Imperial Citrus Yeast between 63'F-70'F
